“Captain’s Cut”
Captain’s Cut — Dockside’s Crew performs what we call a “Captain’s Cut” ; a true restaurant quality job that is truly fit for the captain’s filets to take home! We wouldn’t want anything less for our own fish, so we decided to share it with all! We will trim off any excess skin, bones, and anything else that isn’t fit to stay attached!
IF ABOARD THE FISH EMERYVILLE FLEET — Your deckhand will do most of the filet job on board as you head in from your trip. Once you arrive back, Dockside will take your fresh fish and tag it with a unique number to ensure the fish returned are the same ones you brought up!
Private Boaters & More! — We are more than happy to serve the public and private anglers! Please make sure to call and make a reservation with the crew to make sure they will be available when you plan on arriving!
Vacuum Sealing & Processing
Processing — Most of the fish we work with locally tends to leave lots of slime after filet, which we wash off gently with salt water and pat dry every filet before putting it in a bag.
For Fish Species without “slime” — We do not wash the filets, ONLY pat dry them down!
Vacuum Sealing — Every bag we seal regardless of size is 5 MIL HEAVY DUTY bags to best ensure your catch last as long as possible as well as preventing any punctures/rips that could happen. We portion each bag to size, with our standard bags perfectly holding 2-3 filets. For bigger filets, we have bags as long as 18” prepared for all filet/loin sizes!
